Hello! I thought I would let this group know that “6-8 hours, or until the dough reaches the top of the Pyrex bowl” might not happen. My one week old Kamut sourdough starter had been rising for 7 hours, but was still over an inch from the top of the bowl. I decided to leave it for another 4 hours while I was away from home. I marked the side of the bowl with a sticky note to see if it would rise anymore. It didn’t. I hope this is helpful to someone, anyone. The batter bread still turned out great!

It's good to hear that your Batter Bread turned out well, even though it didn't quite rise to the top of the pan. Given that this was your first week keeping your mother, it's a great sign! It can take upwards of one month to establish your mother. The more developed your mother gets, the more loft you'll see. This is addressed on p. 23. On p. 28, for the first couple weeks, it's advised that you make pancakes or waffles when you're just starting a new mother. Also, since it's a whole grain, Kamut is going to be more dense than say, white flour (see the difference between the white flour Batter Bread and Kamut Batter Bread on p. 34).
