The on and off snowy weather we've been experiencing here has us all craving a bit of comfort food. A batch of white-flour English muffins (Wild Bread, pp. 50–51) should hit the spot!

Here they are cooling off. Sometimes I feel that waiting for fresh bread to cool enough to eat is excruciating.



But, before too long, they're cool enough to be toasted, buttered, and passed around!

In the recipes that call for milk, can you substitute nondairy milk? Such as almond, soy or oat? What about using egg substitutes like chia eggs?

I don't see any issue with substituting eggs and milk with vegan/non-dairy options. If you do try, I'd love to know how your breads turn out!
