So I have a very simple question. Is there an optimal time of the year that is best for starting your wild mother? I have heard that spring is best because there is more wild yeast in the air. Is there any truth to this. If I start my wild mother in the winter will it turn out as well?

I've never heard of one time of year being better than another in terms of the levels of wild yeasts in the air. The only reason I could think to wait to start you mother until warmer months is if your house is typically cold or drafty in the winter months. Conversely, if you live in a particularly warm climate, and your house gets hot during the summer, it could be challenging to keep up with your mother's food needs, as it would be very active. This is less of an issue with the twice daily feedings recommended in Wild Bread.
