Ok- I have only tried kamut flour, and have been trying for approximately 4 weeks with very little suceess. If you had to choose, what is the easiest flour to work with? Which flour get the quickest and best rise? Thanks for your help!!!

Hi Tammy,

If you're looking for light, lofty breads white flour is going to be your best bet. If you want to use a whole-grain flour, sprouted wheat flour is a close second in terms of loft.

The last time we tried their flour it didn't work. When I called them I found out they add Barley Malt to their flour. You might call and ask them if that's still the case. It just would not support the kind of living creatures sourdough needs. Eventually, it supported mold just fine:)
