I'm a little confused about counter mother and refrigerator mother. My friend who has been baking wild bread for about a year now only uses the counter method for the basic bread recipe. From my initial read it looks like you need to advance the counter mother to the refrigerator to make the more advanced breads?
Also can you have counter mother at a time? I would like to make white and whole wheat.
You don't necessarily need to covert your Counter Mother to a Refrigerator Mother in order to make more advanced breads. As long as your Counter Mother is active enough to give reliable rise to breads, you can use it to make just about any type of bread. The hitch is that most of the advanced breads in the book start out with just 1/2 cup of mother and your Counter Mother will produce roughly 6 cups of mother each week (varies depending on the type of flour you're using). This would turn into a whole lot of bread each week, and after roughly 4 weeks of establishing a mother, it's nice to convert to a Refrigerator Mother, if only to go from 2x/day feedings to 1x/week feedings.
You can definitely keep more than one counter mother at a time. Keeping them next to each other can even speed up the development of the wild yeasts.
