Hello ! I have 2 questions...
1. I skipped counter mother bake day last week ... I ran out of flour and didn’t have enough to make the batter breads. I usually bake on Thursday’s , so I didn’t bake and I didn’t get to feed my counter mother from Wednesday night to Monday night. She seems ok , but I will have more mother this week . Could you please give me a suggestion on how to proceed?
2. I also tried the 2 tablespoons in each of 2 glasses , one in the proofer and 1 in the refridgerator. The proofer glass barely rose , only after more than 2 hours. My batter breads rise in the proofer and come almost to the top of baking dish. I started mother on November 30 ,2018. So do you think I should take a chance and add her to the refrigerator?

Hi Joan,

Just to make sure I'm understanding correctly, you skipped a Bake Day because you ran out of flour, but kept the entire volume of your mother in your bowl, and also missed a few feedings? If so, I would recommend you remove some of your mother from the bowl, as the amount of flour and water added at each feeding might not be enough food for your mother (you can portion out extra mother to use later in pancakes of waffles, see tip on p. 174).

As for converting your Counter Mother to a Refrigerator Mother, considering the missed feedings from last week, I'd wait at least an extra week to make sure your mother is performing as usual. Converting Your Counter Mother to a Refrigerator Mother
Once you have a handle on your Counter Mother and are thinking about moving on to the Advanced Section, there are a couple considerations to make. On p. 58, a readiness test is recommended before converting your Counter Mother to a Refrigerator Mother. This test offers a visual opportunity to see if your mother is able to double in volume. However, if your Counter Mother fails to double in volume during the readiness test but is reliably giving loft to Beginner Breads with good flavor, then it’s ready to convert to a Refrigerator Mother.
