Hi my name is Patty and I just started my first counter mother using EinKorn flour. A skin grows on it and I haven't seen anything in the book about this. I have just been mixing it back in twice a day when I feed mother. Is this normal. It has been 4 days and it is starting to come alive.

Hi Patty and welcome! Are you keeping your mother coved with a moist towel and ensuring it doesn't dry out as instructed on in step 3. on p. 28? If the towel covering your mother dries out, the top of your mother can dry out too, and if this happens you will see a skin form on the top.

Yes it's covered and the towel is always moist. I have a older cool house so I have it in a big container with a seed heater and the temp stays between 70 and 75

What does the skin on the top look like? Does it have a noticibly different color or texture? And does it mix back into your mother easily?

It mixes back in easily and the color is almost the same color just a little darker
