Morning from Kansas, bought the book Wild Bread, because I love all of MaryJane Butters books and magazines. I have tried sourdough recipes, and have a starter going right now, I feel like I'm wasting flour by discarding some of the started everyday. With the Wild Bread recipe, there is no waste. Should I start from scratch, making my wild bread, or can I use my sourdough starter, to start my Mother? I really want to be able to make some healthy bread with simple ingredients!

Hi Esther, and welcome to the chatroom! I also feel it's wasteful to discard starter with some sourdough recipes. As for keeping your current starter, and adapting it to the process outlined Wild Bread, is your current starter just flour and water?

Since your existing starter is just flour and water, it seems to me that you should be able to switch to the process outlined in the book. So, to get started, you'd add 1/2 cup of your current starter to a bowl, and then feed it 3/8 cup flour and 1/4 cup water 2x/day, keeping your bowl covered with a moist flour-sack cotton towel.
