I've been diligently feeding my Mother, I call Nana, after my grandmother, for the entire week. tomorrow's bake day but I'm not seeing as "alive" a starter as I have when I've produced other starters. Is it because I feed it twice per day? it hasn't had the time yet to become totally active? Usually when I work with my starter it is quite sour and bubbly. I have tried to keep other breads out of it's 'special place' by covering it when other breads are in the kitchen. Should I go ahead with the first bake in the morning?
Good morning Caroline. On page 23 we mention that most mothers take "at least one month" to mature so that on Bake Days during that first month, you'll want to make pancakes or waffles (Sourdough-Enhanced Treats, page 173) rather than bread. Nana needs a bit more time before she can give rise to the beginning Batter Breads you'll eventually get her started on for her first few performances.
