I am using kamut flour for my mother. (Just made the pancakes and they are wonderful!) The recipe in the book for the sourdough chocolate cake only uses white flour. Is it o.k. to use other flours, such as kamut, to make the cake? Has anyone tried this?

Hi Joyce,

The cake is unique in that we only made this recipe with white flour. I think it could be made with other flours, it just might take a little tinkering. Since you're using Kamut, I think you could follow the white flour recipe amounts with the exception of the added flour. Instead of the 1 cup the recipe calls for, I would start with 3/4 cup, because my biggest concern is that the cake would be dry. Once it's mixed up, if the batter seems a little too wet, you can add an extra flour.
