Hi, I am not new to bread making, however, I am new to some of your methods. My Question is this: I am planning to use Eikorn flour for my mother, after getting her settled into a bread making routine can I then use her starter with other flours for the bread making?

Hi Linda,

During the process of developing the recipe for the mother, we tried a variety of organic and non-organic flours. The non-organic flours had a tendency to do weird things, like turn black, develop mold, or just underperform when compared to organic flours. For this reason, we did not extensively test making breads with non-organic flours, so I cannot say with confidence that using non-organic flour will yield good results. If you do decide to experiment with non-organic flours, at the very least, I would strongly suggest always feeding your mother organic flour.

Hey, Ive a quick question. I'm starting my wildother using organic white flour. Once my mother is ready for baking do I need to continue to use organic flour in my breads? And will I need to continue to feed my refrigerator mother organic white or can I begin using non organic, unbleached white flour for feeding my mother?

Good morning Jane. Yes, if you keep your mother strictly Einkorn you can mix and match the flour in your breads. For instance, it you wanted to use all organic white flour along with your Einkorn mother to make a more delicate bread like PAIN DE MIE (page 119), you could.
