Hidey Ho good neighbors!
Just finished week one with a successful waffle baking day on Sunday. Oh my goodness that is the best waffle recipe ever! I am using Kamut flour and the richness of the flour comes through so beautifully.
I was a little concerned about temperature since my mother lives on my kitchen counter at a pretty steady 70 degrees. ( I am using an indoor thermometer to monitor it) I wasn't ready to dive in for a proofer yet, so we shall see. Once I get to actual bread it my be a different story.
Let me express my love for the Wild Bread book. It is beautiful. Well thought out. Clearly a labor of love and even a beautiful coffee table book. Worth every year it took you two to Get' re done.
