One of the questions that comes up from time to time is what to do with your mother while on vacations. Generally, it's best to start your mother when you know you'll be home for at least 4 weeks, as your mother will need to be fed 2x/day (each feeding takes less than a minute). While it seems like a lot of time to commit, once your mother is established, it will require minimal care and reward you with plenty of handmade-from-scratch breads. Think of it as nurturing garden seedlings--with proper care and attention, those tiny seedlings will grow into vigorous plants and yield fresh fruits and vegetables for your family to enjoy. As with garden seedlings, with proper care, your mother will grow into a vigorous starter that will yield delightful breads. So, before you endeavor to start a new wild yeast mother, check your calendar and make sure you have at least 4 weeks to dedicate to its care.

Once your mother is established and reliably rising breads, you can move on to the Advanced Section (pp. 56-171) where your mother will take up a permanent residence in your refrigerator and only need to be fed once per week (unless of course you wish to bake more). At this stage, with feedings just once per week, you have a lot more flexibility, and travel will be much easier to accommodate. For extended trips, if you want to keep your refrigerator mother going, ask a friend or a friendly neighbor to care for your refrigerator mother and refresh it once per week.
