Hi Ashley - My quinoa starter and brown rice starters are fully developed (after a few months. I have put them back on the counter for twice daily feedings to enliven them Once I put the starter on the counter for a few days/week do i just take 1/2 cup of the counter starter and continue on with the advanced bread recipes? or can i take 1 1/2 cups out in the morning while it is on the counter and bake an advanced bread recipe?

For the time that you have your mothers on the counter to liven them up, I recommend going back to the start and making recipes from the Beginner Breads Section. This should make it easy to gauge if your mothers are ready to go back into the refrigerator.
