Been using my starter that isn't quite fermented enough to make pancakes. Have made them twice and have encountered the following issues:

1. too gritty (I've been grinding quinoa in my Blendtec, then sifting. Do I perhaps need a smaller mesh sifter?)

2. Don't hold together well--fall apart quite easily.

Any tips on these issues would be greatly appreciated!

Thanks, Ashley! Just responded to your other post. My second batch was finer, and the pancakes weren't gritty--but they still fall apart. Going to tweak the recipe a bit. :)

I think both of these issues point to an issue with your flour being too coarse, so trying to find a finer sifter would be a starting point. In another post, you asked about this, and I had a couple thoughts I posted there.
