What is causing my spelt flour mother to separate. There is a layer of water over the top?

Using fresh ground sprouted spelt flour.

This is usually due to natural separation of the flour and water. As long as your mother smells good, and you don't see any discoloration or mold growth, it's not a cause for concern.
