It means Country Bread in French. It was their daily bread until it became easy to walk out and buy a baguette.
It's made with rye flour along with soft whole wheat. Anyone have a recipe? Techniques you can share? I have made it with yeast and it's so good but originally, it would have been made everyday with a levain. (sourdough starter)

I think you're on the right track. No harm in playing with some water and flour.

Do you think the recipe you've made before can be modified by slightly reducing the amount of water and possibly flour added so you can use a sourdough starter instead of yeast?
