I had been gluten free for years when I read an article that said that those who do not eat wheat are missing important parts of the gut microbiome. Gluten free bread made my gut hurt,so, I ventured into sour dough and found that I could eat sour dough without my gut hurting. So good to get to eat a sandwich again.

Hope to find some help here to improve my bread making and ultimately, the bread.
