I was wondering if there was something I could do to make my wholewheat loaves less dense. I live at 8300 feet above sea level and, although my white flour loaves are amazing, the wholewheat is really, really dense and difficult to swallow, literally. Any thoughts on increasing moisture or flour, etc ??

Thank you, Ashley for those suggestions. I will try to add some white flour instead because the whole wheat flour I have is somewhat gritty in texture. I'll let you know how it goes !

If your whole-wheat loaves are dense and dry, I would think about reducing the amount of flour added to the loaves. Also, is your whole-wheat flour finely ground? Some whole-wheat flours are a little sandy and tend to need more water, and also produce breads that are more dense.

If the moisture seems right, and your whole-wheat mother is active and bubbly, but you're not seeing much loft, I would consider replacing about 1/4 of the whole-wheat flour in the recipe with white flour to see if that improves the texture.
