Hi I'm Shann, an old hippie baker. I was raise in the San Francisco Bay Area. That being said, I have eaten my share of sourdough bread and I have always wanted to try my hand at sourdough baking. I feel that I can now with the Wild Bread book.
I have a questian before I start. Living in the Central Vally it's hot. I close up the house pretty much all day. I do open it up in the evenings and in the morning. Will I be able to get wild yeast with the windows closed most of the day?

Hi Shann and welcome to the chatroom! Having your windows closed most of the day will be fine for baking wild bread. I live in Northern Idaho and have started mothers in the middle of the winter when everything is buttoned up and had great results baking bread. For the most part, the wild yeasts you are introducing to your mother come from the grain you're using and the air that surrounds you. I've not had a problem with these little yeasties being abundant in indoor air.
